2002 Whispering Brook Shiraz

The Hunter Valley is famous for its distinctive Shiraz wines with a spectrum of bouquets and flavours ranging from peppery and spicy to chocolate and berry fruit.

Whispering Brook 2002 Shiraz Variety: 100% Shiraz
Region: Broke Fordwich sub-region, Hunter Valley Australia.
Soil: Terra rossa - red earth loam soils.
Vinification: Stainless steel tanks.
Maturation: New French oak.
Wine tasting: Whispering Brook by appointment.
Colour: Intense crimson-purple.
Bouquet: Very attractive chocolate and blackberry characters with subtle vanillin oak in the background.
Palate: The palate is medium bodied showing good balance and structure with berry flavours and hints of white pepper. These flavours, combined with long term French oak maturation, have yielded a wine of complexity and depth.
Cellaring: Several years.
Food: Beef, venison, lamb and cheese.
Awards: Silver Wine Medal - NSW small winemakers wine show.

2003 Whispering Brook Shiraz

Whispering Brook 2003 Shiraz Variety: 100% Shiraz.
Region: Broke Fordwich sub-region, Hunter Valley Australia.

Colour: Crimson.
Bouquet: Savoury, earthy, strongly regional aromas with blackberry and blackcurrant.
Palate: The palate opens up to red and black fruits on the palate with good length.
Cellaring: Several years.
Food: Beef, venison, lamb and cheese.

2005 Whispering Brook Merlot

Whispering Brook 2004 Merlot Variety: 100% Merlot.
Region: Broke Fordwich sub-region, Hunter Valley Australia.
Soil: Terra rossa - red earth loam soils.
Wine tasting: Whispering Brook by appointment.
Colour: Purple.
Bouquet: The nose displays cedar and tobacco characters with a
hint of smokey oak.
Palate: Medium bodied showing good integration of fruit and
oak with a nice lift from the Cabernet component of
brair and varietal pungency.
Cellaring: Drink now and cellar for several years.
Food: Veal, lamb and chicken.
   

2006 Whispering Brook Limited Release Chardonnay

Bouquet: The nose is lifted and elegant with light lees aromas and white stone fruit characters.
Palate: The palate shows plentiful citrus characters with good texture and very subtle French oak influences.
Cellaring: Medium term.
Food: Chicken seafood, salads and mild cheese.

2006 Whispering Brook Semillon

The Hunter regions is renowned worldwide for premium quality Semillon. This wine is made from hand picked, old vine Semillon grapes grown on sandy loam soils in the Broke-Fordwich sub-region of the Hunter Valley.

Colour: Pale straw.
Bouquet: The aroma displays lifted tropical, grapefruit and lemon zest characters.
Palate: Fine acid structure with good length and fruit weight of guava and grapefruit elements.
Cellaring: This wine can be enjoyed while young or cellared for several years to allow the development of rich toasty bottle aged characters of honey and butter.
Food: Oysters, crustaceans, fish and mild Asian dishes.

2007 Whispering Brook Rosé

Whispering Brook 2006 Semillon Variety: 100% Shiraz.

Colour: Bright red-strawberry in colour.
Bouquet: This wine displays the lifted vibrant fruit flavours of raspberry fruits.

Cellaring: Enjoy this wine whilst young and chill before serving.
Food: Excellent as an aperitif and with Mediterranean and Asian foods.
